Cake!

As some people may know, my birthday was this month, on July 9th. Lucky for me, my parents bought me a KitchenAid mixer (YAY, trying to contain the excitement).

I finally got to test it out today with one of my favorite recipes, cake! This is a family recipe that's been passed down at least 4 generations. Despite being originally made in Germany, then Brazil, and now in the US, it still tasted amazing. So, what better way to put my new mixer to the test than with an approved and delicious recipe? So here we go:

Ingredients:

  • 100 grams of butter
  • 2 eggs
  • 1.5 cups of sugar
  • 1.5 cups of flour
  • ½ cup of milk
  • 1 tablespoon of baking powder
  • 1 tablespoon of cocoa powder

 

Directions:

  1. Preheat the oven to 350°
  2. Start by mixing just the butter and 2 eggs at low speed.
  3. Add in the flour, sugar and milk and slowly bring it to medium-high speed.
  4. Use a rubber spatula to clean off the sides and return it to a medium-high speed for 2-3 minutes.
  5. The batter should be smooth and falling of the blade. It should not be extremely thick that it doesn't come off the blade but it also shouldn't be liquid.
  6. Scoop ¾ of the batter into a lightly greased 8x8 baking pan.
  7. With the remaining batter in the bowl, add the cocoa powder. 
  8. Mix the new mixture for 1-2 minutes at medium-high speed.
  9. Add the chocolate mix to the baking pan and use the rubber spatula to lightly mix the two. Be careful to not scrape the bottom or sides of the greased baking pan.
  10. Bake for 35-40 minutes without opening the oven door.

Tips:

  • To grease the baking pan, I use a little bit of butter and spread it around. Then I coat it with flour, shaking the excess off on top of the sink.
  • As you hit 35 minutes, quickly (and carefully) open the oven door and stick a toothpick in 3-4 different sections of the cake. The toothpick should come out clean, without any of the cake sticking to it. If it's clean, take it out. If there's a bit of cake stuck to the toothpick, leave it in for another 2-3 minutes and repeat this step.
