Five minute salmon

I may have mentioned this already, but I'm an extremely picky eater. I don't eat vegetables, legumes, fruits, and many other things. Although I've been trying very hard to branch out and find healthy alternatives on a daily basis, there are a few dishes that I still fall back on. One of my favorites is salmon. In addition to actually liking salmon, I get the added benefit of it being rich in omega 3 fats and amino acids. Salmon is also an extremely easy and flexible dish to make, as prep time can take as little as 10 minutes and it can be served with a multitude of sides. For this weekend, I chose to go plain, with just some white rice and oven roasted potatoes.

Ingredients:

  • Salmon fillet
  • 1 lime
  • 1 tablespoon of olive oil
  • 1/4 teaspoon of salt
  • 1 tablespoon of garlic
  • herbs to taste

Directions:

  1. Lightly rinse the salmon before seasoning
  2. In a glass dish, place the salmon on top of aluminum foil
  3. Squeeze the juice of 1 lime into the dish and add 1 tablespoon of olive oil
  4. Combine the salt, garlic, and any herbs and evenly spread on both sides of the salmon using the lime juice
  5. Cover the dish with saran wrap and place in the refrigerator for 20 minutes for it to be properly seasoned
  6. Preheat oven to 350°
  7. Place the dish in the oven for 35-40 minutes, or until edges are just light brown
  8. Enjoy!

Notes:

Usually when I purchase salmon, I get it from Costco, which means it's A LOT of salmon. However, I haven't been as lucky shopping elsewhere. So, to deal with how much food there is, I usually cut a piece of it and cook just that, which will last me a week. I put the rest in the freezer, uncooked. I've found that it'll taste better if you freeze it uncooked and then take it out to cook than to freeze it already cooked.

In addition, when cooking the salmon, you may notice that the lemon juice will burn. Since this was just used to help season the salmon, the left over juice around it won't actually be consumed, so don't worry too much if it's a bit burned.
