Zoey's Birthday

It was Zoey's birthday two weeks ago!! Gosh, I can't believe she's already 3. Time has just flown by. To celebrate, I made a few cupcakes for her and they actually turned out really good! Granted, she eats anything you put in front of her, but still, it had peanut butter, so it had to be good right?

I found numerous recipes online and ended up just combining a few different ones.

Ingredients

  • 1 large egg
  • 1/4 cup of peanut butter
  • 1/4 cup of canola oil
  • 1 teaspoon of vanilla extract
  • 1/3 cup of honey
  • 1 cup of shredded carrots
  • 1 cup of white flour
  • 1 teaspoon of baking soda

Directions

  1. Preheat oven to 350 degrees F
  2. Grease 6-7 cupcake liners or use silicone cupcake liners
  3. In a large bowl, combine the egg, peanut butter, oil, vanilla, and honey
  4. When thoroughly mixed, stir in shredded carrots
  5. Lastly, add flour and baking soda, mixing well
  6. Spoon batter into cupcake liners
  7. Bake for 35-40 minutes
  8. Let it cool for at least 40 minutes prior to feeding to your dog

For fun, I added some peanut butter to the top as frosting. Zoey went straight for it, and after licking it all off, tried to eat the cupcake whole.  So I'd say this was a successful mini birthday party!
